Turkey-Cranberry Sauce Salad

Are you wondering what to do with all those delicious leftovers from Thanksgiving? Put a twist on traditional chicken salad with a turkey, a little mayonnaise and some cranberry sauce. Fresh, light, zingy and bursting with flavor, not to mention it's a terrific immune booster!

INGREDIENTS

3 cups leftover cooked turkey, shredded
2 stalks celery, chopped
2 green onions, chopped (white and light green parts only)
1/2 cup chopped walnuts
1/2 cup safflower mayonnaise
1/3 cup leftover cranberry sauce
1/8 teaspoon paprika
Sea salt and pepper, to taste
Splash lemon juice
7 cups salad greens
4 cups thawed frozen cherries

DIRECTIONS

In a large bowl, combine the first 9 ingredients (turkey through lemon juice). Serve over salad greens, with cherries on the side.
