Watermelon “Pizza”

Beautiful watermelon is a treat on Phase 1 of The Fast Metabolism Diet! This incredible recipe is one of my family's favorites in the summer when watermelon is ripe and sweet. 

Phase 1 | Serves 1
Prep time: 15 minutes | Total time: 20 minutes

Ingredients

1 watermelon slice (about 1 inch thick, rind removed)
½medium-size red onion, sliced thin
2 tablespoons unseasoned rice vinegar
2 tablespoons water
1 tablespoon fresh lemon juice
5 drops liquid stevia
¼ teaspoon sea salt
1 ½ cups organic mixed baby greens
½ cup organic canned garbanzo beans
2 teaspoons nutritional yeast

For the dressing:

1 tablespoon fresh lemon juice
1 tablespoon unseasoned rice vinegar
1 teaspoon grain mustard
1 teaspoon Dijon mustard
6 drops liquid stevia
1/8 teaspoon sea salt

Directions

  1. Place sliced onion in a small bowl. Add 2 tablespoons of unseasoned rice vinegar, 2 tablespoons of water, 1 tablespoon of lemon juice, 5 drops of liquid stevia and ¼ teaspoon of sea salt and toss well. Set aside and let it marinate for 10 minutes.

  2. In the meantime, prepare the dressing. Whisk all the ingredients together (you can also use a glass jar with a lid and shake it vigorously). Refrigerate until ready to use.

  3. To prepare the salad, place baby mixed greens in a medium bowl. Add marinated onions (discard the liquid) and garbanzo beans, pour dressing over (start with half, and add more to taste) and toss well.

  4. To assemble the “pizza”, place the watermelon slice on a large plate. Arrange salad on top and sprinkle with nutritional yeast. Serve with your favorite Phase 1 grain.
