Watermelon “Pizza”
Beautiful watermelon is a treat on Phase 1 of The Fast Metabolism Diet! This incredible recipe is one of my family's favorites in the summer when watermelon is ripe and sweet.
Phase 1 | Serves 1
Prep time: 15 minutes | Total time: 20 minutes
Ingredients
1 watermelon slice (about 1 inch thick, rind removed)
½medium-size red onion, sliced thin
2 tablespoons unseasoned rice vinegar
2 tablespoons water
1 tablespoon fresh lemon juice
5 drops liquid stevia
¼ teaspoon sea salt
1 ½ cups organic mixed baby greens
½ cup organic canned garbanzo beans
2 teaspoons nutritional yeast
For the dressing:
1 tablespoon fresh lemon juice
1 tablespoon unseasoned rice vinegar
1 teaspoon grain mustard
1 teaspoon Dijon mustard
6 drops liquid stevia
1/8 teaspoon sea salt
Directions
- Place sliced onion in a small bowl. Add 2 tablespoons of unseasoned rice vinegar, 2 tablespoons of water, 1 tablespoon of lemon juice, 5 drops of liquid stevia and ¼ teaspoon of sea salt and toss well. Set aside and let it marinate for 10 minutes.
- In the meantime, prepare the dressing. Whisk all the ingredients together (you can also use a glass jar with a lid and shake it vigorously). Refrigerate until ready to use.
- To prepare the salad, place baby mixed greens in a medium bowl. Add marinated onions (discard the liquid) and garbanzo beans, pour dressing over (start with half, and add more to taste) and toss well.
- To assemble the “pizza”, place the watermelon slice on a large plate. Arrange salad on top and sprinkle with nutritional yeast. Serve with your favorite Phase 1 grain.
