Chicken, Red Pepper, and Basil Lettuce Wrap

Ingredients

8 ounces leftover chicken breast, sliced
1/2 cup jarred roasted red pepper strips
1/2 cup red onion, sliced paper-thin
2 teaspoons balsamic vinegar
1 teaspoon Italian seasoning
Lettuce leaves
1/4 cup chopped fresh basil

    Directions

    1. In a bowl, stir together the first five ingredients (chicken through Italian seasoning).

    2. Spoon onto lettuce leaves and scatter the basil on top.
