Broccoli Breakfast Slaw

INGREDIENTS FOR MEAL MAPS A & B

1 cup broccoli slaw
2 tablespoons water (Meal Map B use olive oil)
2 eggs
1/2 medium zucchini, diced
5 mushrooms, thinly sliced
1/2 teaspoon garlic powder
Chopped fresh parsley - garnish
1 cup fresh cherries (OMIT for Meal Map B)
Sea salt and freshly ground black pepper - to taste


INGREDIENTS FOR MEAL MAP C 

2 cups broccoli slaw
2 tablespoons olive oil
4 eggs
1 medium zucchini, diced
10 mushrooms, thinly sliced
1 teaspoon garlic powder
Chopped fresh parsley - garnish
Sea salt and freshly ground black pepper - to taste


DIRECTIONS

    1. Heat a large nonstick skillet over medium-high heat. Add the broccoli slaw, broth or water, and season with salt and pepper. Cook, often stirring until the liquid has evaporated (about 4 minutes).

    2. Heat a small nonstick skillet over medium-low heat. Crack the eggs into the skillet, and cook until the whites are set.

    3. While the eggs are cooking, add the zucchini, mushrooms, garlic powder, and another pinch of salt and pepper to the large skillet, and cook with the broccoli slaw, stirring regularly, until the eggs are finished.

    4. Transfer the broccoli slaw to a bowl, slide the eggs on top and sprinkle with fresh parsley. Meal Map A - enjoy with cherries on the side.
