Bunny Pancakes

INGREDIENTS
- 4 large egg whites
- 1 cup Fast Metabolism Baking Mix
- 1/3 cup raw cacao powder
- 1/4 cup xylitol
- Blueberries, to serve
DIRECTIONS
- Whip the egg whites until soft peaks form, 2 to 3 minutes.
- Combine the Fast Metabolism Baking Mix, cacao, and xylitol, and gently fold into the egg whites.
- In a hot nonstick skillet, drop about 3 tablespoons of the batter to make a circle for the bunny's face.
- Drop about 1 tablespoon of batter into an oval shape (we'll use this pancake for the ears).
- Cook until small bubbles appear. Flip and cook for a minute more.
- Cut the smaller pancake in half to form the bunny's ears, and add blueberry eyes and nose.
- Portion: 2 bunny pancakes (4 pancakes) is a P1 grain; 1 bunny pancake (2 pancakes) is a P3 grain.
