Chicken Sausage Bowl

INGREDIENTS

12 ounces chicken sausages (or chicken breast), diced
½ cup sliced mushrooms
¼ cup sliced red onion
1 red bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 teaspoon minced garlic
2 tablespoons organic vegetable broth
1 sweet potato, baked and diced
1 tablespoon chopped fresh cilantro
3 cups cooked brown rice
¼ cup salsa

DIRECTIONS

  1. Heat a large nonstick pan over medium heat. Add the sausage and cook until browned, stirring often. 
  2. Add the mushrooms, onion, bell peppers, garlic, and broth and simmer for 3 minutes. 
  3. Add the sweet potato and cilantro and cook, stirring often, for about 3 minutes, until the sweet potato is warm. 
  4. Pour the mixture over the brown rice and top with salsa.
