Chicken Sausage with Brown Rice Fusilli

Phase 1 | Serves 4 | Prep time: 10 minutes | Total time: 10 minutes

Ingredients:

8 ounces brown rice fusilli
16 ounces chicken sausage
2 cups cubed zucchini
1 cup broccoli florets
1/4 cup minced red onion
1 tablespoon crushed garlic
1/4 teaspoon sea salt
1/8 teaspoon black pepper

Directions:

Prepare the pasta according to package directions, being careful to not overcook the pasta. When the pasta is done, strain and rinse it. Set aside.

Cut the chicken sausage into 1-inch pieces.

Preheat a large nonstick skillet. Add 1 tablespoon of water and stir in the sausage, onion, and garlic. Cook on medium heat until lightly browned.

Incorporate the zucchini, broccoli, salt, and pepper, and cook until vegetables are crisp-tender, about 3–5 minutes.

Add the pasta to the skillet and toss until warmed through. Serve immediately with a small dinner salad.
