Garlic-Dijon Grilled Steak

Ingredients
12-ounce skirt steak (about 3/4 inch thick)
Sea salt and freshly ground black pepper
2 garlic cloves, minced
2 tablespoons Dijon mustard
1 tablespoon fresh lime juice
Directions
- Season the steak on both sides with salt and pepper. In a small bowl, stir together the garlic, mustard, and lime juice. Rub the steak with the mustard mixture and marinate 15 minutes.
- Preheat a grill, well-seasoned grill pan, or broiler pan to moderately high heat. Grill the steak 3 minutes on each side for medium-rare (or broil about 4 inches from the heat). Transfer the steak to a platter and let it stand, uncovered, 5 minutes.
- With a sharp knife, diagonally cut the steak into 1/3-inch-thick slices and serve.
