  1. Pour 1-1/2 cups dried chick peas (garbanzo beans) into your crock pot; add enough water to cover the chickpeas, plus one inch.
  2. Cook on high for four to five hours, checking periodically and adding hot water as needed, or cook on low overnight.
  3. Drain the chick peas. Reserve the water.
  4. Blend the chick peas, adding the water back in until your hummus reaches the desired texture.
  5. Stir in a drizzle of olive oil, 3 tablespoons of fresh lemon juice, and several cloves of minced, pressed, or grated garlic (to taste).
