Lemon Basil Pork Chops with Wild Rice

Metabolism Revolution Part 1 Dinner | Serves 1
Prep time: 20 minutes | Total time: 30 minutes
INGREDIENTS MEAL MAP A
1/4 cup fresh basil, minced
2 1/4 teaspoons garlic, minced
2 1/4 teaspoons fresh lemon juice
1/4 teaspoon sea salt, plus more as needed
1/8 teaspoon ground pepper, plus more as needed
4 ounces thick-cut pork loin chop
1/2 cup cooked wild rice
2 cups asparagus, cut into 1-inch pieces
Fresh lemon juice, as needed
MEAL MAP B ADAPTATIONS
4 cups asparagus, cut into 1-inch pieces
MEAL MAP C ADAPTATIONS
1/2 cup fresh basil, minced
1 1/4 tablespoons garlic, minced
1 1/4 tablespoons fresh lemon juice
1/2 teaspoon sea salt, plus more as needed
1/4 teaspoon ground pepper, plus more as needed
8 ounces thick-cut pork loin chop
4 cups asparagus, cut into 1-inch pieces
INSTRUCTIONS
1. In a small bowl, combine the basil, garlic, lemon juice, salt, and pepper and mix well. Coat both sides of the pork chops with the mixture and let sit for 20 minutes. Steam the asparagus in a steamer or steamer basket over boiling water for about 5 minutes, or until crisp-tender and bright green.
2. Heat a grill to medium or heat a grill pan over medium heat.
3. Grill the chops over direct heat for 5 to 6 minutes per side, or until the internal temperature reaches 145º F. Let rest for 5 minutes.
4. Serve with wild rice and steamed asparagus alongside. Season with salt and pepper and drizzle with lemon juice.
