Crunchy Onion Rings for Your Next Salad
Makes about 1 cup of onion rings | Prep time: 10 minutes | Total time: 14 hours
Ingredients
- 1/4 cup tamari
- Juice of 1 lemon or lime
- 1/2 teaspoon onion salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/8 teaspoon sea salt
- 1/8 teaspoon crushed red pepper flakes
- 1 yellow or white onion, sliced into rings
Directions
- Combine all ingredients except for the onions in a resealable plastic bag. Add the onions, seal the bag, and toss to coat. Refrigerate and let marinate for 8 hours or overnight.
- Drain and discard the marinade. Put the onions in a dehydrator or in the oven on wire racks with a foil-lined baking sheet underneath. Arrange the onions 1/4 inch apart on the racks. Bake uncovered at 200 degrees for 6 to 7 hours, or until the onions are crispy.
- Remove from the oven; cool completely. Refrigerate or freeze in an airtight container.

Rose Wagner was looking for some books to download to her iPad from the digital section of her county library in Sweeny, Tex. Writes Rose: “I usually browse fiction but Fast Metabolism Diet was featured as one of the more popular books. I have been trying to eat healthier the last 20 years but as I got older I struggled with getting down to my goal weight. I was intrigued that I could lose up to 20 pounds in 28 days. Much of what of Haylie outlined in the book made sense and I decided to try it for 4 weeks. I bought the book and the cookbook and now I am hooked.”
Rose loves eating on the three phases. She told us it’s great knowing that if she really craves something not on a particular phase, she knows she’ll eventually get to have it. And she’s loved getting back to cooking: “Now I am back in the kitchen almost every day trying new things I find in the blog. I always preferred sweet potatoes over white ones and it is a treat that I can count it as a free veggie. Sweet potato pancakes are yummy. Jicama was such a surprise and now is a regular addition to my kitchen. I have introduced it to my Friday night card playing bunch. They bring sweets and I bring healthy treats like sweet potato hummus and jicama. The sweets do not tempt me when I had an avocado smoothie for breakfast.”
Rose continues: “My results are not as dramatic as the folks featured in the book because I only lost 6 pounds after 28 days. But what I did like was that I did not feel like I was “dieting” or deprived. I lost my cravings and wasn’t hungry. In fact sometimes it was an effort to get in all the snacks. So I decided to do another cycle. After 16 weeks I lost 18 pounds and it shows. My husband teases me that I must be using the Brazilian butt lifter! With FMD I know I will get to my goal weight and be able to maintain it.”
Rose has a wonderful and supportive family: “I am married to a very special Renaissance man – very handy to have around and we complete each other. We just celebrated our 42nd anniversary. Our two sons are married and we have one granddaughter. I have a great job as a service specialist for a large corporation. I will be retiring at the end of the year and looking forward to having more free time. I am training to become a Master Gardener and love using home grown foods in my FMD recipes.”
