Rhubarb Compote

Makes about 3 cups | Prep time: 5 minutes | Total time: 12 minutes

 Ingredients

  • 4 cups 1/2-inch pieces fresh rhubarb (from about 1 1/2 pounds)
  • 1 cup xylitol
  • 2 tablespoons fresh lemon juice

 Directions

  1. Combine all ingredients in heavy large saucepan.
  2. Stir over medium heat until xylitol dissolves.
  3. Reduce heat to medium-low, cover, and simmer until rhubarb is tender, stirring occasionally, about 7 minutes.
  4. Serve warm, chilled, or at room temperature.
