Spinach-Egg White Tuna Salad
Give your tuna salad an extra punch of protein by adding a few hard-boiled egg whites to it. Toss in some spinach, chopped red onion, and immune-boosting herbs, like dill and oregano, for a healthy spin on a classic salad.

INGREDIENTS
3 hard-cooked egg whites
6 ounces canned tuna in water, with excess water squeezed out
1/2 cup frozen spinach, thawed with excess water squeezed out
2 to 4 tablespoons red onion, chopped
1 tablespoon Dijon mustard
1 tablespoon chopped fresh dill
1/4 teaspoon dried oregano
1/4 teaspoon freshly ground black pepper
2 cups red bell pepper strips
DIRECTIONS
- In a medium bowl or reusable container, mash the hard-cooked egg whites.
- Add the next seven ingredients (tuna through black pepper) and mix well.
- Serve with red bell pepper strips (1 cup per serving).
