Metabolism Revolution Part 1 Breakfast | Serves 1
Prep time: 10 minutes | Total time: 20 minutes
INGREDIENTS MEAL MAP A
2 eggs, whole
2 egg whites
2 cups total of bell pepper, mushrooms, onion, baby spinach, and jalapeno in whatever proportions you prefer
1/2 cup brown rice, cooked
1 cup pineapple, diced
Red pepper flakes to taste
Sea salt and ground pepper to taste
MEAL MAP B ADAPTATIONS
4 cups total of bell pepper, mushrooms, onion, baby spinach, and jalapeno in whatever proportions you prefer
MEAL MAP C ADAPTATION
4 eggs, whole
0 egg whites
4 cups total of bell pepper, mushrooms, onion, baby spinach, and jalapeno in whatever proportions you prefer
INSTRUCTIONS
1. In a small bowl, lightly beat the eggs (and egg whites, for Meal Maps A and B) just to combine.
2. In a large nonstick skillet, combine the bell pepper, mushrooms, onion, baby spinach, and jalapeno and cook over medium heat until tender. Add the eggs (and egg whites) and cook, stirring the mixture with a spatula to scramble the eggs, until the eggs are cooked. Season with red pepper flakes, salt, and black pepper.
3. Serve over brown rice. Top with pineapple.
