Creamy Guacamole

Phase 3 | Serves 1
Prep time: 5 minutes | Total time: 5 minutes


1 teaspoon safflower mayonnaise
1/2 avocado
1 teaspoon cilantro
1 teaspoon lime juice
1/8 teaspoon cracked red pepper
Salt and pepper to taste
1 cup sliced cucumber or jicama


    1. Mash first 6 ingredients together and serve with the Fast Metabolism Irresistible Crackers. 



Phase 3 | Serving: 1/3 cup
Prep time: 5 minutes | Total time: 5 hours


1 1/2 cups dried chickpeas
Olive oil to taste
3 tablespoons fresh lemon juice
3-4 cloves garlic, minced and pressed


    1. Pour 1-1/2 cups dried chickpeas (garbanzo beans) into your crock pot; add enough water to cover the chickpeas, plus one inch.
    2. Cook on high for four to five hours, checking periodically and adding hot water as needed, or cook on low overnight.
    3. Drain the chickpeas. Reserve the water.
    4. Blend the chickpeas, adding the water back in until your hummus reaches the desired texture.
    5. Stir in a drizzle of olive oil, 3 tablespoons of fresh lemon juice, and several cloves of minced, pressed, or grated garlic (to taste).

Coconut Sour Cream

Phase 3 | Makes about 1/2 cup  
Prep time: 5 minutes | Total time: 5 minutes


Cream from 1 15-ounce can coconut milk
1 or 2 tablespoons lemon juice
1/8 teaspoon sea salt


    1. In a medium bowl, whisk together the coconut cream, lemon juice and salt until combined.
    2. Adjust salt to taste and add more lemon, if desired.
    3. Refrigerate for about an hour before serving to allow flavors to combine.
    4. Depending on the coconut milk you buy, your sour cream might end up a little grainier than dairy sour cream. You can also strain it through a fine sieve if you want it extra smooth. That’s it!


Jalapeño Cashew Cheese

Phase 3 | Serves 4
Prep time: 5 minutes | Total time: 4 hours


Coconut oil, for greasing
1 cup raw cashews
1 1/3 cups water
1/4 cup tahini
1/4 cup nutritional yeast
2 tablespoons coconut oil
1 tablespoon fresh lemon juice
2 1/2 teaspoons sea salt
1 tablespoon agar-agar powder (not flakes)
2 medium jalapenos, minced
