Here are 4 delicious drinks and desserts perfect for Phase 1 of the Fast Metabolism Diet.

 

Watermelon Mint Cooler

Phase 1 | Serves 4

Prep Time: 10 minutes | Total Time: 10 minutes

Ingredients

  • 4 cups seedless watermelon chunks (about 1 pound)
  • 1½ cups spring water
  • ¼ cup fresh lemon juice
  • 3⁄8 teaspoon stevia
  • ½ cup fresh mint
  • Mint sprigs, lime slices for garnish, optional

Directions

  1. In a blender, puree the watermelon, water, lemon juice, and stevia; strain if no pulp is desired.
  2. Stir in the mint and serve over ice. Garnish with sprigs of mint, if desired.

 

Peach-Strawberry Lemonade Spritzer

Prep time: 15 minutes | Total time: 3 hours (includes chilling time)

  Ingredients

  •    4 cups water
  •    2 cups coarsely chopped peaches, plus more for garnish
  •    3/4 cup xylitol
  •    1/2 cup fresh strawberries, plus more for garnish
  •    1 cup fresh lemon juice
  •    4 cups ice
  •    16 ounces seltzer

 Directions

  1. Combine the water, peaches and xylitol in a saucepan over medium-high heat.
  2. Bring the mixture to a boil, reduce the heat to low, and simmer for 3 minutes.
  3. Pour the mixture into your blender and allow it to sit uncovered for 20 minutes to cool slightly.
  4. Add the strawberries.
  5. Secure the lid onto your blender and puree until smooth.
  6. Chill the mixture thoroughly (this will take a few hours in the fridge, or you can put it in the freezer to speed things up).
  7. Pour the mixture through cheesecloth into a large pitcher.
  8. Stir in the lemon juice.
  9. Divide the mixture among 12 ice-filled glasses, and top with a splash of seltzer.
  10. Garnish with peach and strawberry slices and enjoy!

 

Frozen Fruit Kebabs

Prep time: 10 minutes | Total time: 3 hours (includes freezing time)

Ingredients

  • 4 cups mixed Phase 1 fruits (strawberries, blueberries, blackberries, cubed pineapple and sliced kiwi work well)

 Directions

  1. Thread the fruit onto wooden skewers.
  2. Lay the skewers on a plate or tray, cover it with plastic wrap, and freeze until you’re ready to serve (the fruit will be completely frozen in about 3 hours).

 

Mango and Cayenne Paletas

Prep time: 15 minutes | Total time: 6 hours

Ingredients

  • 4 medium, ripe mangoes (about 3 1/2 pounds)
  • 1/4 cup freshly squeezed lime juice (from about 2 medium limes)
  • 2 1/2 teaspoons stevia, plus more as needed
  • 3 pinches cayenne pepper, plus more as needed
  • 1/8 teaspoon sea salt

 Directions

  1. Peel and cut 1 mango into medium dice; set aside.
  2. Peel and cut the remaining 3 mangoes into large chunks and place in a blender.
  3. Add the lime juice, stevia, cayenne, and salt to the blender and process until the mixture is smooth.
  4. Taste and blend in additional cayenne 1 pinch at a time, and additional stevia 1/8 teaspoon at a time, as needed.
  5. Transfer the mixture to a medium bowl and stir in the diced mango.
  6. Divide the mixture among four 1/2-cup popsicle molds and freeze until solid, at least 6 hours.
