COVID Recovery Pineapple "Push-Up" Pops by Haylie Pomroy

Next time you are looking for a refreshing treat you should try my Pineapple Push-Up Pop recipe! Remember, being healthy doesn't mean you have to deprive yourself of delicious treats. Make these next time you have a sweet tooth.

Watch me as I'm featured on The Doctors creating these delicious push-up pops. I made these push-up pops during my own Covid recovery, and I found them to be a great source of hydration. You want to make sure that you are consuming half your body weight (in ounces) of water every day, especially when you are recovering from being sick. This is a treat that will help satisfy your sweet tooth as well as fuel your metabolism!

Ingredients

1 whole pineapple, peeled, cored, and cut into chunks (about 3 cups)

3/4 cup canned coconut milk (not low-fat)

1/4 cup raw cacao nibs

Directions

1. Line seven wells of a muffin tin with paper liners. Puree the pineapple and coconut milk in a blender until smooth. Stir in the cacao nibs. Pour the pineapple mixture into the prepared muffin cups, dividing it evenly.

2. Cover with plastic wrap, then stick ice pop sticks through the plastic into the center of each cup (the plastic wrap helps the sticks stay upright as the pops freeze). Freeze overnight.

3. To serve, remove the plastic wrap, lift out the pops, peel off the paper lines, and enjoy immediately.
