You've Staged a Metabolism Revolution, What next?

If you’ve lost a nice chunk of weight and you feel great, but you still aren’t all the way down to your goal, you can hang out at your current weight for a while. Some people feel a little nervous about a new weight they haven’t seen in years, or a weight that is below a historical set point they’ve been trying to get past. If this is you, it can be very valuable to pause right where you are for a while. Even if you still have a lot of weight to go, sometimes it’s a good idea to take time to adjust and get comfortable at your new weight - to get it fixed and solid, so you feel like it’s real. It may not be your ideal weight (yet), but it might be your ideal-for-now weight, and you want to feel strong and solid and confident right there. I call this a holding weight because you are steady and holding, not continuing to lose right now, but not regaining either.

Your body may need to catch up to your weight loss. Your skin cells regenerate every two to four weeks. Red blood cells completely replace themselves in four months. The liver renews itself every 150 to 500 days. As your body renews itself at your new, lower, more metabolically active weight, you will feel stronger and more secure. Then, when you are ready, you can begin the process again. Or maybe you will discover that the weight you only thought was temporary feels so good that it actually is your ideal weight, after all. There is nothing wrong with adjusting that number in your head.

Remember, the scale can give you a number but it is whole real foods that give you the micronutrients that run your metabolism. Enjoy this incredibly delicious meal and know that you are putting power on your plate. 

Curried Quinoa with Seasoned Pork

QUINOA, RINSED 3 TABLESPOONS

LEMON ZEST 1/4 TEASPOON
1/4 TEASPOON
 1/4 TEASPOON
FRESH LEMON JUICE 1 TEASPOON
1 TEASPOON
1 TEASPOON
CURRY POWDER 1/3 TEASPOON 
1/3 TEASPOON 
1/3 TEASPOON 
BABY SPINACH 2 CUPS 4 CUPS 4 CUPS
SCALLION
1 TABLESPOON CHOPPED
1 TABLESPOON CHOPPED
1 TABLESPOON CHOPPED

 

1. Heat a grill to medium heat or a grill pan over medium heat.

2. Season the pork with salt and pepper to your preference. Grill for about 5 minutes on each side, or until the internal temperature registers 145º F on an instant-read thermometer. 

3. Meanwhile, cook the quinoa according to the package directions, until light and fluffy. Let cook until warm to the touch, then stir in the lemon zest, lemon juice, and curry powder and season with salt and pepper. 

4. Put the spinach in a large bowl or on a plate. Top with quinoa. Place the pork medallions on top of the quinoa and garnish with the scallion.
